CEIA IS A FINE DINING EXPERIENCE IN OUR LISBON SANCTUARY - SANTA CLARA 1728.
Ceia is our fine dining experience where up to 14 guests gather around one table, to share the same menu and experience, an evening of notable exchanges.
"Ceia" - the Portuguese word for supper - recalls for comfort, tradition and friendship. It also represents one of the deepest values within the Portuguese culture, the pleasure of preparing and sharing our food, with the ones we cherish the most, while creating the opportunity to share a significant moment in time, at the end of each day.
From Wednesdays to Saturdays, at 19:30, guests have the opportunity to enjoy our 10 course menu "Change".
In 2023 we entered our current chapter, with Head Chef Renato Bonfim and team, as well as a new menu titled "The Last Harvest" centered around the regeneration of our soil and how alarming threats like the shortage of food, water and desertification are continuing to weaken the stability of our planet.
While in our first chapter we told the story of how we are bringing life back to our soil, through regenerative agriculture and holistic management in our own farm at Herdade no Tempo, for our second, our consciousness and awareness have broaden. For "Change" our focus relies on the nine limits proposed by professor and scientist Dr. Johan Rockström, who has gathered the planetary boundaries for Earth's stability. These nine limits span from biosphere integrity, climate change, ocean acidification, stratospheric ozone depletion, novel entities, atmospheric aerosol loading, biogeochemical flows, freshwater use and land-system change.
Focusing on the thesis proposed by Dr. Johan Rockström, our Head Chef and team have gathered in our 10 course menu - "Change" - their own take on the most significant changes we can propose to the fine gastronomy industry, while offering a chance to the stability and prosperity of our planet.
